Mushrooms cooked in wine and coriander

The all rounder favourite!

The white mushrooms are the most popular mushrooms around the world and their botanical name is ‘’Agaricus Bisporus’’. Mushrooms are very popular in Cypriot cuisine especially on the fasting period.

Yield: Makes  2 portions

You will need:
500 gr. white mushrooms
2 spring onions chopped
4 tablespoon organic extra virgin olive oil
125ml. red wine
4 tablespoons dry crushed coriander seeds
1 teaspoon sea salt and a pinch of ground white/black pepper-(optional) to taste
Fresh chopped coriander for garnish

Preparation:
1.Wash, dry and cut the mushrooms.
2.In a casserole put the olive oil, add the spring onion and mushrooms and saute until they  get a golden brown colour.
3.Add the dry coriander and wine, cover with the lid and cook until the wine evaporates.
4. Season with salt and pepper and serve.

Tip of the Chef

Garnish with fresh chopped coriander. You may also use other types of mushrooms if you wish. For extra flavor add some fresh garlic and thyme.
