An Easter favourite sweet treat!

Easter cookies are a favourite morning or afternoon treat for everyone.
They are ideal to accompany a good cyprus coffee.

  • 250 gr. butter unsalted
  • 150 gr. icing sugar
  • 50 gr. honey
  • 5 gr.(1 small bag of vanillin sugar)
  • 2 eggs
  • 1 orange (keep zest and the juice of the orange)
  • 10 gr. brandy
  • ¼ teaspoon sea salt
  • 2 teaspoon baking pow der
  • 600 gr. all purpose flour


1.Beat in the mixer with the ‘K’ attachment the butter with the icing sugar and honey at high speed for 5 minutes ( It is important to beat a long time for a frothy dough).

2. Start the mixer at low speed by adding slowly-slowly the eggs, the brandy and the orange juice and zest. Add the flour, the baking powder salt and the vanillin sugar.

3. Give to koulourakia the shape of your choice. Put  them in a non stick baking paper and bake in a preheated oven at 170⁰C for 15 minutes according to their size.

4.Take them out of the oven and after they have cool completely serve.

Tip of the Chef

You may add ground almonds in the mixture.
It is important to keep easter koulourakia in an airtight container.

Instead of icing sugar you may use powder of Stevia-natural sweetener.
