Pomilorotiania (Tomatoes with eggs) is a traditional  Cyprus food very favourite to adults and children.

Ingredients:
8 large ripe tomatoes
4 eggs
4 tablespoons olive oil
1/2 teaspoon basil or marjoram
1/2 teaspoon sugar(optional)
Salt and pepper to taste

Preparation:
1.Wash the tomatoes and grate tmem in a grater or pass them from the mixer or blender.
2.Put the tomatoes in a small casserole and cook until all liquids evaporate and a thick paste has formed.
3.In a casserole put the olive oil and add the tomatoes.Cook for 4-5 minutes(to remove the acids from the tomatoes).


4.Beat the eggs with a wire whisk and add them in the casserole stirring constantly for 2-3 minutes.
5.Add the basil, salt and pepper and serve.

Tip of the Chef

 To peel the tomatoes very easily, boil them in hot water for 1 minute. Afterwards we can remove the seeds and chop them. We can add sugar to the tomatoes if they are sour.
