Kolokasi is a root vegetable that grows in Cyprus. In order to cook kolokasi it’s important to know how to treat it. Have in mind that you never wash kolokasi. First you peel it, and then by holding it with a kitchen paper (so it will not slide in your hands), you cut it into pieces.
Actually you don’t cut it!... You press the knife into kolokasi and “crack” it into small pieces (3-4cm each). You follow this procedure all around the bulb of kolokasi until it is finished.
Kolokasi with pork meat
- 1 kg kolokasi (2-3 bulbs of kolokasi)
- 1 kg pork meat cut into pieces
- 2 onions chopped
- 1 kg fresh tomatoes chopped or 400 gr tinned chopped tomatoes
- Selery chopped (approx. 2-3 cups)
- Salt, pepper
- Olive oil for cooking
Heat oil in a deep pan. Add meat and cook until it gets some brown colour.
Add onions, stir from time to time and cook until they are soft.
Add kolokassi and cook for about 10 minutes stirring occasionally .
Add tomatoes, selery, salt and pepper.
Let it simmer for 5-10 minutes stirring occasionally.
Add water until is almost covered and simmer until the sauce is reduced and kolokasi is soft.
Remove from the fire and let it “rest” for a while so all the flavors will bond together.
You can serve it with yogurt and….. “kali oreksi”!!!.... (Bon Appetite)
