Stuffed zucchini blossoms recipe
Zucchini blossoms can be cooked in various ways. You can fry them and have a delicious starter, or fill them with cheese and herbs. Today I will show you how to stuff zucchini blossoms with rice.
Zucchini blossoms must be used with care because they are very delicated.
1 cup rice
2 large onions finely chopped
4-5 grated ripe tomatoes
¾ cup parsley finely chopped
2 tbsp dried mint (or fresh chopped mint)
¼ cup olive oil in the stuffing
¼ cup olive oil for cooking
11/2 cup water for cooking
Mix all the ingredients in a bowl.
Start filling the blossoms (1 teaspoon) and fold the petals of the blossom in such a way so the stuffing is kept inside the flower.
Cover the bottom of a deep pan with thin slices of potato or zucchini in order to avoid food sticking to the pan. Place the stuffed flowers in a circular way in the pan. Add water and oil and let it be cooked in low heat until liquids are absorbed.
Let it rest for a while and serve with yogurt.
